| Trim steaks of visible fat. Melt 1 teaspoon of the butter in a pan on medium-high heat. Add steaks, cook 3-4 minutes, turn, cook a further 3-4 minutes. Remove. Keep warm.

| Melt remaining butter in pan juices. Saute mushrooms, garlic and shallots. Add wine, tomato paste, stock and let simmer 5 minutes. Season to taste.

| Place broccoli and carrots together in a saucepan, cook 5 minutes.

| Melt a teaspoon of butter in a pan, gently saute potato slices 5 minutes, or until cooked. Sprinkle with herbs.

| Spoon sauce over steaks and serve with accompanying vegetables.
