20 Minute Steak with Mushroom Sauce


Preparation Time: 5 minutes
Cooking Time: 15 minutes


4 boneless sirloin or rib eye steaks 2 tablespoons tomato paste
3 teaspoons butter 1/2 cup beef stock
150g button mushrooms, sliced 250g broccoli, cut into flowerets
1 clove garlic, crushed 310g can baby carrots, drained
4 shallots, finely chopped 4 small potatoes, sliced
1/4 cup dry red wine 1/4 teaspoon mixed herbs


1 Trim steaks of visible fat. Melt 1 teaspoon of the butter in a pan on medium-high heat. Add steaks, cook 3-4 minutes, turn, cook a further 3-4 minutes. Remove. Keep warm.
2 Melt remaining butter in pan juices. Saute mushrooms, garlic and shallots. Add wine, tomato paste, stock and let simmer 5 minutes. Season to taste.
3 Place broccoli and carrots together in a saucepan, cook 5 minutes.
4 Melt a teaspoon of butter in a pan, gently saute potato slices 5 minutes, or until cooked. Sprinkle with herbs.
5 Spoon sauce over steaks and serve with accompanying vegetables.
