35 Minute Swiss Veal Roast


Preparation Time: 8 minutes
Cooking Time: 27 minutes


800g boneless veal loin 2 slices tasty cheese
2 slices wholemeal bread, crusts removed 12 baby potatoes, washed
1 teaspoon Italian herbs 200g green beans
1 tablespoon grated parmesan cheese 1/2 cup white wine
2 slices ham 3 shallots, finely chopped
1 chicken stock cube 1 teaspoon French mustard
1/2 cup evaporated skim milk


This is a microwave dish.

1 Preheat browning dish 8 minutes on high (100%). Trim meat. Place bread down centre of veal. Sprinkle with herbs and parmesan. Arrange ham and cheese slices on top of bread and herbs. Roll up, tie and secure with toothpicks.
2 Remove browning dish from microwave, add 2 teaspoons butter, place meat seam side up. Cook on medium (50%) 10 minutes. Turn meat over, cook a further 10 minutes on medium (50%). Remove and wrap in aluminium foil. Stand for 5 minutes whilst vegetables cook.
3 Put potatoes on to boil 8-10 minutes. When cooked, dot with a teaspoon of butter. Place beans on to cook for 4-5 minutes. Remove meat from foil, cut into slices.
4 Combine a teaspoon of cornflour, wine, shallots, stock cube and mustard. Cook on high 2 minutes, add skim milk. Spoon sauce over veal slices and serve with vegetables.
