32 Minute Lemon & Lamb Chops


Preparation Time: 14 minutes
Cooking Time: 18 minutes


8 lean lamb chump chops 1/4 cup dry sherry
1/4 cup lemon juice 1 tablespoon oil
1/2 teaspoon dried rosemary leaves 2 teaspoons brown sugar
2 cloves garlic, crushed 2 cups sliced celery
2 tomatoes, sliced 3-4 radishes, sliced
1 tablespoon chopped fresh mint 1/3 cup black olives
4 cobs corn


1 Mix together dry sherry, lemon juice, oil, rosemary, sugar and garlic in a bowl. Add chops, marinate 10 minutes. Preheat griller to medium high.
2 Combine celery, tomato, radish slices in a bowl, toss with salad dressing, mint and olives. Chill
3 Strip husks and silk from corn, place seperately on large pieces of foil. Top with a little butter and a sprinkle of water. Wrap, sealing with double folds, put packages under griller and cook 15-18 minutes, turning occasionally.
4 After corn has cooked for 5 minutes, drain chops, grill 4-5 minutes each side, brush occasionally with marinade. serve chops accompanied by the salad and corn.
