35 Minute Beef Spinach Rolls


Preparation Time: 5 minutes
Cooking Time: 30 minutes


600g lean beef mince 8 spinach leaves, stalks removed
2 rashers bacon, fat removed, chopped 1 onion, chopped
1 clove garlic, crushed 1 egg
1/2 teaspoon paprika 425g can tomato puree
1 beef stock cube 1 teaspoon dry mustard
2 teaspoons worcestershire sauce 1 cup long grain rice
2 tablespoons parsley, chopped


This is a microwave recipe

1 Place spinach into a microproof container, cover and cook on high (100%) 3 minutes, set aside. Cook bacon and onion uncovered on high 2 minutes.
2 Combine minced beef, bacon, onion, garlic, egg and paprika. Divide into 8 portions. Place each portion on top of a spinach leaf, roll up. Arrange rolls in a shallow container, seam side down.
3 Mix puree, stock cube, mustard and worcestershire sauce, pour over rolls, cover and cook on high 5 minutes, reduce power to medium (50%) 5 minutes. Turn rolls, cover, cook a further 15 minutes on medium.
4 While spinach rolls are cooking boil rice according to directions on packet. Drain, toss parsley through.
5 Serve spinach rolls, masked with the sauce, accompanied by the rice.
