500g Lean Beef strips
| 2 teaspoons canola oil

1 teaspoon chopped ginger
| 1 red capsicum, sliced

2 sticks celery, sliced
| 200g snowpeas
|
1/4 cup black bean sauce

| 1 | Mix beef strips with oil and ginger |

| 2 | Heat wok (or frypan) on high |
| 3 | Stir-fry beef strips in small batches for 1-2 mins. Remove when cooked and allow wok to reheat before stir-frying next batch. |
| 4 | Add capsicum, celery and snowpeas to wok with a sprinkling of water. Steam 2-3 mins. return stir-fried beef strips. |
| 5 | Stir in black bean sauce. Toss to heat through, about 1-2 mins. Serve with rice or noodles. If desired, sprinkle with toasted almonds. |
