Oriental Mini Roast


Serves 4 2 Trim Lamb round or topside mini roasts
1/2 cup strained ginger marmalade 2 teaspoons freshly crushed garlic
2 tablespoons soy sauce



1 heat oven to 220C. Weigh roasts individually to calculate cooking time (based on the weight of one roast only). Combine remaining ingredients and brush over surface of the roasts.
2 Place roasts onto a rack in a roasting dish. Roast for calculated time allowing per 100g, 7-8 mins for rare, 9-10 mins for medium, or 11-12 mins for well done. Total cooking time will be about 30-40 mins. Baste occasionally with soy mixture, reserving any leftover for a sauce.
3 remove roasts from oven. Leave to rest for 10 mins in a warm place, covered loosely with foil before carving. Heat any leftover soy baste to serve as a sauce.
