Moroccan Beef

Cooking Time: 10 minutes
Serves 4






500g Lean Beef strips 1 tablespooon canola oil
1 onion, chopped 1/3 cup slivered almonds
1/2 cup sultanas 1 teaspoon ground turmeric
1 teaspoon ground cumin 1 tablespoon sugar
400g can tomatoes with their juice 60g spinach, shredded


1 Mix beef strips with half oil and garlic
2 Heat wok (or frypan) on high
3 Stir-fry strips in small batches for 1-2 mins. Remove when cooked and allow wok to reheat before stir-frying next batch.
4 Heat remaining oil in wok. Fry onion, almonds and sultanas for 1 minute. return stir-fried beef strips.
5 Add turmeric, cumin, sugar, tomatoes and spinach. Toss to heat through, about 1-2mins. serve with couscous or boiled rice.
