Beef Pesto

Preparation Time: 10 minutes
Cooking Time: 10-15 minutes







4 lean beef steaks (600g) 1 tablespoon canola oil
2 tablespoons sundried tomato paste 1 onion, chopped
1/2 red capsicum, cut in strips 2 medium zucchini, cut into strips
200g Pasta Bows, cooked to pkt directions.


1 Heat a heavy based pan on high. Brush oil onto both sides of steak.
2 To seal, cook steak 2-3 mins each side. Turn when juices appear on uncooked side.
3 Note: Steak thickness determines cooking time. As a guide: Rare, remove after sealing; reduce heat to medium and cook and extra 2-3 mins each side; Well done, 4-6 mins each side.
4 Test steak by pressing with tongs. Rare feels soft. Medium has some resistance. Well Done feels quite firm.
5 Remove steaks from pan, spread with pesto and rest while frying vegetables 1 minute. Slice steak, add to vegetables in pan with pasta, toss to heat through. If desired garnish with extra pesto and serve with salad.
