Lamb drumsticks marinated in a spicy Rogan Josh curry paste and yoghurt then slowly roasted.
Serves 4
| 8 lamb drumsticks (frenched lamb shanks)

4 tablespoons Patak's Rogan Josh Curry Paste
| 1/3 cup almond meal
|
200g ctn plain yoghurt
| 1/3 cup brown sugar
|
1-2 cups water.
|
| 1 | Mix together curry paste, almond meal, yoghurt and half the brown sugar over the drumsticks then marinate 30 mins (overnight for more flavour). |

| 2 | Heat oven to 180C. Place drumsticks onto a rack in a roasting pan. Sprinkle with remaining brown sugar. Pour water into pan to a depth of 1.5cm. |
| 3 | Roast for 11/2 - 2 hours, basting with pan juices and adding extra water to pan if required. |
