Sweet Chilli Beef

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Serves 4






500g Lean Beef Strips 2 teaspoonos canola oil
1 teaspoon crushed garlic 2 spring onions, sliced
1 carrot, cut in strips 2 teaspooons Thai red curry paste
3 tablespooons sweet Thai chilli sauce 80g cherry tomatoes, quartered
4 tablespoons chopped basil or coriander 120g dried Chinese noodles, cooked to pkt directions.


1 Mix beef strips with oil and garlic
2 Heat wok (or frypan) on high.
3 Stir-fry beef strips in small batches for 1-2 mins. Remove when cooked and allow wok to reheat before stir-frying next batch.
4 Add onion and carrot to wok with a sprinkling of water. Steam for 2-3 mins. Return stir-fried beef strips.
5 Stir in Thai curry paste, chilli sauce, tomatoes and basil or coriander. Add noodles. Toss to heat through, about 1-2 mins. Serve with grated cucumber and a slice of lime. Garnish with basil or coriander leaves.
